Looking to upgrade my stock brake master cylinder. My bike is track only, and I’ve gotten mixed opinions so far as to what Brembo I should be using.
I was told a 19x17, 19x18, 19rcs, and a 17rcs. Has anyone upgraded and to what?

If it's track only, don't get the RCS, it's more expensive and more easily damaged than the racing ones. Also has a brake light switch on it since it's designed as a "performance street" master cylinder. You'll want 19x18 or 19x20 racing master, depending on what type of braking feel you like. 19x18 gives you more lever travel and a lighter pull, 19x20 is shorter travel and a stiffer feel. Most people prefer 19x18, as 19x20 can feel very "touchy". I run 19x20 because I have short fingers and want to run the lever close to the bar. You don't need the expensive billet ones, the normal forged racing masters are totally fine for a track day bike or even for club racing.
