I plan on buying a Ducati late winter/early spring, but at that point I'm not sure what the 2017 models will be and I really like all of these options you listed for the 959. This S model needs to happen :|

Yes that would be great and based on what we read here, it would sell contingent of its price point. Personally, I would consider paying up close to the same price for a 959 Panigale S with the features I listed above as I would pay for a base 1299 Panigale.
